EGGPLANT FRITTERS

These crispy fritters make the perfect low-carb and vegetarian snack or appetizer.
Course: Appetizer

Ingredients
  

  • 2 Eggplants
  • 2 Cups Almond Flour
  • 7 Eggs (or equivalent egg substitute)
  • 1 Pinch Salt
  • 1 Pinch black pepper
  • Olive Oil (as needed for deep frying)

Method
 

  1. Cut eggplants into small pieces.
  2. Dip the eggplant pieces in a batter made out of almond flour or chickpea flour and eggs or egg substitute.

  3. Add salt and pepper to taste. Fry in oil and do dry out the excess oil on a paper towel. I personally use olive oil.
