VEGETABLE LEMON FRIED RICE WITH BAKED BEYOND MEAT BEYOND BURGER

This fried rice makes for the perfect vegetarian and low-carb Christmas meal.

Ingredients
  

  • 4 Cups Low Glycemic Index Basmati Rice
  • Beyond Burger
  • Lemongrass (1 Bunch)
  • Fresh Lemon Juice
  • Mixed Vegetables (Of Your Choice)
  • 1 Carton Vegetable Broth
  • Salt To Taste
  • Pepper To Taste
  • Olive Oil

Method
 

  1. Place all the ingredients in olive oil and fry the rice for a few minutes.
  2. Add 9 cups of water and boil the rice.
  3. Turn the stove to medium heat and then to low heat as the rice cooks. I usually double the water but increased by a cup as I had extra items added to the rice.

  4. To bake the beyond burgers follow directions on the box and after baking, slice and place them on the cooked rice.
