VEGETABLE SOUP

This vegetable soup is vegetarian and low-carb! The perfect winter comfort soup.
Course: Main Course

Ingredients
  

  • 1 Yellow Squash
  • 2 Boxes Mushrooms
  • 1 Bell Pepper
  • 2 Jalapeños
  • Lemon Grass (Half Bunch)
  • 2 Green Chilies
  • 1 Box Vegetable Stock
  • Salt (To Taste)
  • Pepper (To Taste)
  • 2 Tomatoes

Method
 

  1. Place all ingredients in a pot and boil together.

  2. I add green chilies to make it spicy. Please avoid green chilies if you don’t take it spicy.
  3. Let it all cook together. I usually cook for 20 minutes.
